A Note on Difficulty (Read This or Suffer the Consequences)

These recipes are rated on a four-tier system: CHILL, LEGIT, THE REAL DEAL, and A FUCKING ORDEAL. I’m not messing around with these ratings, kemosabe—they tell you exactly what you’re getting into.

CHILL means you can actually relax for once. Minimal technique, almost no opportunity for catastrophic failure. If you can follow basic instructions and operate a blender without injuring yourself, you’re good. These are your confidence builders, your Tuesday night impulses, your proof that interesting ice cream doesn’t require a breakdown.

LEGIT means you need to show up. Multiple components, solid custard fundamentals, sustained focus. These are forgiving if you stay present instead of scrolling your phone, but you can’t phone it in either. Half-assing this gets you half-assed ice cream.

THE REAL DEAL means even experienced home cooks will probably blow something on the first attempt, buckaroo. Narrow margins, techniques that go irreversibly wrong in seconds. You’re burning honey to the exact point where perfect and ruined are a coin flip. You’re browning butter three separate times while sweating like you’re defusing a bomb. You’ll make each of these twice before you master it. That’s not failure—that’s the process.

A FUCKING ORDEAL means you’ve genuinely lost your mind, and I respect it, my guy. Ingredient sourcing so absurd the fruit dies in forty-eight hours. Yeasted dough from scratch, 360-degree frying oil, multiple caramels, three-plus hours of active work. These are trophy recipes. Most people have better judgment than us.

Don’t start with A FUCKING ORDEAL if you’ve never made custard—you’ll cry, and not in a good way. Don’t start with THE REAL DEAL if you’re new to ice cream; that’s how you end up hating this cookbook and me personally. Build confidence with CHILL, work through LEGIT to develop component management and custard technique, tackle THE REAL DEAL to master precision, and then attempt A FUCKING ORDEAL when you’re ready to commit. Or just start with the hardest one. I’m not your dad.
